Spiced Pear Muffins
|Whole wheat flour||1 2⁄3 Cup (26.67 tbs)|
|Soy flour||1⁄3 Cup (5.33 tbs)|
|Baking powder||1 Tablespoon|
|Chopped pears||1⁄2 Cup (8 tbs) (About 1/2 Inch, Use Fresh Or Drained, Canned Pears)|
|Egg||1 , beaten|
|Milk/1 cup water plus 1/4 cup milk powder / 1/2 cup instant||1 Cup (16 tbs)|
|Melted butter/Oil||4 Tablespoon|
Stir the dry ingredients together with the spices in a small bowl; add the chopped pears and distribute them gently throughout the flour mixture.
Blend the liquid ingredients together and then pour them into the dry all at once. Stir 12 times or less to moisten.
Fill oiled muffin tins 2/3 full; bake at 400°F for about 25 minutes, until nicely browned. Serve hot.
