|Sifted flour||2 Cup (32 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Egg||1 , well beaten|
|Milk||1 Cup (16 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted and slightly cooled|
1. Preheat oven to hot (400° F.).
2. Sift together the flour, sugar, baking powder and salt.
3. Mix the egg, milk and butter. Add the liquid mixture to the dry ingredients and stir only until the flour is moistened. Do not beat the batter until smooth.
4. Spoon into well-greased muffin tins, filling the cups about two-thirds full. Bake about twenty-five minutes and serve immediately.
