Basic Cornmeal Muffins
|Cornmeal||1 Cup (16 tbs)|
|Flour||1⁄2 Cup (8 tbs)|
|Baking powder||1 Teaspoon|
|Buttermilk||1 Cup (16 tbs)|
|Liquid vegetable shortening||1⁄4 Cup (4 tbs)|
Preheat oven to 450 degrees.
Place the cornmeal in a mixing bowl.
Sift the flour, baking powder, salt and soda together and add to cornmeal.
Add the buttermilk and beat well.
Add the egg and mix well.
Place 1 teaspoon vegetable shortening in each cup of a muffin pan.
Place the muffin pan in oven until smoking hot.
Fill muffin cups 2/3 full with cornmeal mixture.
Bake for 15 to 20 minutes.
