Baked Blueberry Muffins
|Sifted all purpose flour||2 Cup (32 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Soft butter/Shortening||1⁄2 Cup (8 tbs)|
|Sugar||1 Cup (16 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Blueberries||1 Cup (16 tbs), floured|
Preheat oven to 375 degrees.
Sift the flour, baking powder and salt together.
Place the butter, sugar, eggs and vanilla in a bowl and beat with mixer at high speed until light and fluffy.
Beat in flour mixture alternately with milk with mixer at low speed, beginning and ending with flour mixture.
Beat until smooth.
Fold in blueberries and fill muffin cups about 2/3 full.
Bake for 20 to 25 minutes and serve warm.
