Curried Cornmeal Muffins

Ingredients
  Green onion 1⁄4 Cup (4 tbs), chopped
  Vegetable oil 3 Tablespoon
  Cornmeal 1 1⁄4 Cup (20 tbs)
  Sifted flour 3⁄4 Cup (12 tbs)
  Salt 3⁄4 Teaspoon
  Baking powder 1 Tablespoon
  Sugar 2 Tablespoon
  Curry powder 1 Tablespoon
  Egg 1 , beaten
  Milk 1 Cup (16 tbs)
Directions

Preheat oven to 425 degrees.
Cook the onion in oil until tender and set aside.
Sift the cornmeal, flour, salt, baking powder, sugar and curry powder together into a bowl.
Add the egg, milk and onion and stir until just mixed.
Fill 12 greased medium muffin cups 2/3 full.
Bake for 15 to 18 minutes.
Serve hot.
