Date Citrus Muffins
|Honey||1⁄3 Cup (5.33 tbs)|
|Margarine||1⁄4 Cup (4 tbs), softened|
|Crushed pineapple||1 Can (10 oz), undrained|
|Orange peel||1 Tablespoon, grated|
|All purpose flour||1 Cup (16 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Ground nutmeg||1⁄4 Teaspoon|
|Dates||1 Cup (16 tbs), chopped|
|Almonds||1⁄2 Cup (8 tbs), chopped|
Beat honey and margarine 1 minute in large bowl.
Beat in egg, crushed pineapple and orange peel.
Combine remaining ingredients.
Stir into pineapple mixture until just blended.
Spoon batter into greased muffin pans.
Bake at 375°F 25 minutes.
Turn out onto rack to cool.
