Healthy Zucchini Muffins
|Oat bran baking mix||1 Cup (16 tbs)|
|Slightly beaten egg white||1|
|Cooking oil||1 Tablespoon|
|Pumpkin pie spice||1⁄2 Teaspoon|
|Shredded zucchini||1⁄2 Cup (8 tbs)|
In a large mixing bowl stir the Oat Bran Baking Mix. Stir together egg white, water, cooking oil, honey, and pumpkin pie spice. Add egg white mixture to the baking mix all at once. Mix just till moistened. Fold in zucchini. Line 4 muffin cups with paper bake cups or spray with nonstick spray coating. Spoon batter into muffin cups.
Bake in a 400° oven about 18 minutes or till light brown. Serve warm.
