Maple Corn Muffins
|Egg||1 , beaten|
|Milk||1⁄3 Cup (5.33 tbs)|
|Maple syrup||2 Tablespoon|
|Yellow cornmeal||1⁄2 Cup (8 tbs)|
|All purpose flour||3⁄4 Cup (12 tbs)|
|Baking powder||1 1⁄2 Teaspoon|
|Butter||3 Tablespoon, melted|
Mix the egg, milk and syrup.
Mix the cornmeal, flour, baking powder and salt in a bowl and stir in syrup mixture gradually.
Add the butter and mix.
Fill well-greased hot muffin cups 3/4 full.
Bake at 425 degrees for 15 minutes or until brown.
Serve hot with butter and maple syrup, if desired.
