|Whole wheat flour||1 1⁄2 Cup (24 tbs)|
|Granulated sugar||1⁄4 Cup (4 tbs)|
|Double acting baking powder||1 Tablespoon|
|Skim milk||1 Cup (16 tbs)|
|Unsalted margarine||6 Tablespoon, melted (1/3 Cup Plus 2 Teaspoons)|
|Egg||1 , beaten|
Preheat oven to 400°F.
In medium bowl, using a fork, combine cereal, flour, sugar, and baking powder.
In 2-cup measure thoroughly blend milk, margarine, and egg; add milk mixture to dry mixture and, using a fork, stir to combine (do not overmix or beat).
Using a 12-cup nonstick muffin pan that has 2 1/2-inch-diameter cups, spoon an equal amount of batter into each cup; bake for 15 to 20 minutes (until muffins are browned and a toothpick, inserted in center of muffin, comes out dry).
Remove muffins to wire rack to cool.
