Cape Cod Muffins's picture
  Sifted all purpose flour 2 Cup (32 tbs)
  Baking powder 1 Tablespoon
  Apple pie spice 1 1⁄2 Teaspoon
  Salt 1 Teaspoon
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Canned whole berry cranberry sauce 1 Pound (1 Can)
  Egg 1
  Vegetable shortening 1⁄4 Cup (4 tbs), melted

1. Sift flour, baking powder, apple-pie spice and salt into a large bowl; stir in brown sugar.
2. Drain cranberry sauce; measure out 1 cup (save remaining sauce and liquid to serve later). Beat egg in a small bowl; stir in measured cranberry sauce and melted shortening. Add all at once to dry ingredients; stir lightly until evenly moist. Spoon into 12 medium-size greased muffin-pan cups.
3. Bake in a hot oven (400°) for 20 minutes, or until golden-brown.
