Twin Mountain Muffins

  All purpose flour 2 Cup (32 tbs)
  Baking powder 3 Teaspoon
  Salt 1⁄2 Teaspoon
  Butter/Half butter and half shortening 1⁄4 Cup (4 tbs)
  Sugar 1⁄4 Cup (4 tbs)
  Egg 1 , beaten
  Milk 1 Cup (16 tbs)

Sift flour, measure, and resift 3 times with baking powder and salt.
Cream butter and blend in sugar gradually.
Add beaten egg and beat until smooth and fluffy.
Add flour mixture alternately with milk, beating well after each addition.
Dip into greased muffin tins, filling about 2/3 full, and bake in a moderate oven (375° F.) for about 25 minutes or until delicately browned.
Serve hot.
