College Inn Blueberry Muffins
|Flour||3 Cup (48 tbs), sifted|
|Baking powder||4 Teaspoon|
|Sugar||1⁄2 Cup (8 tbs)|
|Egg||2 , beaten|
|Shortening||1⁄2 Cup (8 tbs), melted|
|Milk||1 Cup (16 tbs)|
|Blueberries||1 Cup (16 tbs) (canned or frozen)|
Sift dry ingredients together and mix in blueberries.
Mix eggs, shortening, and milk together.
Combine the 2 mixtures.
Stir gently just to dampen the flour.
Fill muffin pans 2/3 full and bake in 400-degree oven, 20 minutes.
