Date Bran Muffins
|Chopped dates||1 Cup (16 tbs)|
|Boiling water||1 Cup (16 tbs)|
|Lemon juice||2 Tablespoon|
|Brown sugar||3⁄4 Cup (12 tbs)|
|Egg||1 , beaten|
|Sour milk||1⁄2 Cup (8 tbs)|
|Natural bran||1 3⁄4 Cup (28 tbs)|
|Unsifted all purpose flour||1 Cup (16 tbs)|
|Baking powder||1 Teaspoon|
Combine first eight ingredients in a large bowl and stir well.
Let stand until lukewarm, then add egg and sour milk.
Stir in bran and flour, sifted with the baking powder.
Spoon into 1 1/2 dozen large greased muffin cups.
Bake at 375F for 20 to 25 minutes or until set.
