Oat Bran Muffins
|Oat bran||2 1⁄2 Cup (40 tbs), uncooked|
|Brown sugar||1⁄4 Cup (4 tbs), firmly packed|
|Chopped nuts||1⁄4 Cup (4 tbs)|
|Currants||1⁄4 Cup (4 tbs)|
|Baking powder||1 Tablespoon|
|Egg whites||4 Large, lightly beaten|
|Skim milk||3⁄4 Cup (12 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Vegetable oil||2 Tablespoon|
|Almond extract||1 Teaspoon|
|Vanilla extract||1 Teaspoon|
|Vegetable oil spray||1|
Preheat oven to 350° F.
In a bowl, combine oat bran, sugar, nuts, currants, baking powder and salt.
In a small bowl, combine egg whites, milk, honey, oil, almond and vanilla extracts.
Add to dry ingredients and mix to blend.
Spray two muffin tins lightly with vegetable oil spray or use paper muffin cups.
Spoon mixture evenly into muffin cups.
Bake 20 to 25 minutes, or until light brown.
Serve warm or at room temperature.
