Hot Apple Muffins

Ingredients
  Flour 8 Ounce (225 Gram)
  Baking powder 1 Teaspoon
  Lard 3 Ounce (75 Gram)
  Dark brown sugar 2 Ounce (50 Gram)
  Cooking apples 3 Large, peeled, cored and minced
  Egg 1 , beaten
  Butter 1 Tablespoon (To Serve)
  Caster sugar 1 Tablespoon (To Serve)
Directions

Sift the flour and baking powder into a bowl.
Rub in the lard, then stir in the sugar.
Mix together the apples and egg and add to the flour mixture with a little milk if the mixture seems too dry.
Turn into a greased Swiss roll tin and bake in a preheated moderately hot oven (200°C/400° F, Gas Mark 6) for 35 minutes or until evenly browned.
Cut into 7.5 cm/3 inch rounds for traditionally shaped muffins or cut into squares.
Split open and spread with butter.
Dredge with caster sugar and serve hot.
