1/2 cup farina
1 cup firmly packed biscuit mix
1/4 tsp salt
1/3 cup sugar
1 egg, beaten
3/4 cup sour cream
1/2 tsp grated lemon rind
1/4 tsp baking soda
1 cup fresh or frozen blueberries
Mix the first four ingredients together and lightly stir in a mixture of the egg, sour cream, lemon rind and soda.
Fold in blueberries.
Spoon into 8 greased muffin cups and bake at 400F for 15 to 20 minutes.
