Date Muffins

  Sifted enriched flour 1 3⁄4 Cup (28 tbs)
  Sugar 2 Tablespoon
  Baking powder 2 1⁄2 Teaspoon
  Salt 3⁄4 Teaspoon
  Chopped pitted dates 2⁄3 Cup (10.67 tbs)
  Egg 1 , well beaten
  Milk 3⁄4 Cup (12 tbs)
  Salad oil/Melted shortening 1⁄3 Cup (5.33 tbs)

Sift together flour, sugar, baking powder, and salt into mixing bowl; stir in chopped dates.
Make a well in the center.
Combine egg, milk, and salad oil; add all at once to dry ingredients.
Stir quickly only till dry ingredients are moistened.
Drop batter from spoon into greased muffin pans, filling 2/3 full.
Bake in a hot oven (400°) about 25 minutes.
