Twin Mountain Muffins
|All purpose flour||2 Cup (32 tbs)|
|Baking powder||1 Tablespoon|
|Butter||1⁄4 Cup (4 tbs), softened|
|Sugar||1⁄4 Cup (4 tbs)|
|Egg||1 , separated|
|Milk||3⁄4 Cup (12 tbs)|
Lightly grease muffin pans.
Combine flour, salt, and baking powder; set aside.
Cream butter; add sugar slowly.
Beat egg yolk and add to butter mixture; alternately add flour mixture and milk, beginning and ending with flour.
Beat egg white until stiff; fold into batter.
Fill muffin, pans one-half full.
Bake at 400° for 20 minutes.
