Jellied Cranberry Muffins
|All purpose flour||1 3⁄4 Cup (28 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||2 1⁄2 Teaspoon|
|Egg||1 , well beaten|
|Milk||3⁄4 Cup (12 tbs)|
|Vegetable oil||1⁄3 Cup (5.33 tbs)|
|Jellied cranberry sauce||8 Ounce, chilled and cut into 1/2 inch cubes (1 Can)|
Combine flour, sugar, baking powder, and salt; make a well in center of dry ingredients.
Combine egg, milk, and oil; add all at once to dry ingredients, mixing just enough to moisten.
Fill greased muffin pans one-third full.
Sprinkle cranberry over batter in muffin pans.
Top with remaining batter.
Bake at 400° for 25 minutes.
