Cranberry Orange Muffins
|Unbleached flour||1 Cup (16 tbs)|
|Baking powder||1 1⁄2 Teaspoon (arrowroot)|
|Baking soda||1⁄4 Teaspoon|
|Safflower oil||2 Teaspoon|
|Orange juice||1⁄2 Cup (8 tbs)|
|Orange rind||1⁄2 Teaspoon, grated|
|Cranberries||1⁄2 Cup (8 tbs), cut in half|
|Sunflower seeds||2 Teaspoon, chopped|
|Brown sugar||2 Teaspoon|
Combine flour, baking powder, salt, and baking soda.
Combine oil, orange juice, orange rind, cranberries, and honey.
Pour all at once into the flour mixture.
Stir just to moisten.
Quickly spoon into well-greased muffin tins.
Combine sunflower seeds, cinnamon, and brown sugar and sprinkle on top.
Bake at 375° about 25 minutes, or until well browned.
This recipe can be doubled.
