Cranberry Orange Muffins

Ingredients
  Unbleached flour 1 Cup (16 tbs)
  Baking powder 1 1⁄2 Teaspoon (arrowroot)
  Salt 1⁄4 Teaspoon
  Baking soda 1⁄4 Teaspoon
  Safflower oil 2 Teaspoon
  Orange juice 1⁄2 Cup (8 tbs)
  Orange rind 1⁄2 Teaspoon, grated
  Cranberries 1⁄2 Cup (8 tbs), cut in half
  Honey 1 Teaspoon
  Sunflower seeds 2 Teaspoon, chopped
  Cinnamon 1⁄4 Teaspoon
  Brown sugar 2 Teaspoon
Directions

Combine flour, baking powder, salt, and baking soda.
Set aside.
Combine oil, orange juice, orange rind, cranberries, and honey.
Pour all at once into the flour mixture.
Stir just to moisten.
Quickly spoon into well-greased muffin tins.
Combine sunflower seeds, cinnamon, and brown sugar and sprinkle on top.
Bake at 375° about 25 minutes, or until well browned.
This recipe can be doubled.
