  Whole wheat flour/Null 1 Cup (16 tbs) (Null)
  Granulated sugar/Null 1⁄2 Cup (8 tbs) (Null)
  Cinnamon/Null 1 1⁄2 Teaspoon (Null)
  Baking powder/Null 1 Teaspoon (Null)
  Baking soda/Null 1 Teaspoon (Null)
  Cranberry sauce/Null 1 Cup (16 tbs) (Null)
  Egg/Null 1 (Null)
  Buttermilk/Low fat plain yogurt 1⁄2 Cup (8 tbs) (Null)
  Vegetable oil/Null 1⁄4 Cup (4 tbs) (Null)
  Grated orange rind/Null 1 Teaspoon (Null)
Directions

In bowl, combine bran, flour, sugar, cinnamon, baking powder and baking soda; mix well.
Add cranberry sauce, egg, buttermilk or yogurt, vegetable oil and orange rind; stir just until combined.
Spoon batter into paper-lined or nonstick muffin tins.
Bake in 400°F/200°C oven for 25 minutes or until firm to the touch.
Makes 12 muffins.
