Sweet Potato Muffins

Ingredients
  All purpose flour 1 3⁄4 Cup (28 tbs)
  Firmly packed brown sugar 1⁄4 Cup (4 tbs)
  Baking powder 1 Tablespoon
  Salt 1 Teaspoon
  Ground cinnamon 2 Tablespoon
  Chopped nuts 1⁄2 Cup (8 tbs)
  Eggs 2 , beaten
  Milk 3⁄4 Cup (12 tbs)
  Canned sweet potatoes 16 Ounce, drained and mashed (1 Can)
  Melted butter/Margarine 1⁄4 Cup (4 tbs)
  Ground cinnamon 1⁄2 Teaspoon
  Sugar 2 Tablespoon
Directions

Combine flour, brown sugar, baking powder, salt, cinnamon, and nuts; set aside.
Combine eggs, milk, sweet potatoes, and butter; add to dry ingredients.
Mix just until moist.
Fill greased muffin pans two-thirds full.
Combine cinnamon and sugar; sprinkle over muffin batter.
Bake at 425° for 35 minutes.
