Another of my Blueberry Muffin recipe,with lovely flavors of lemon & orange;rest assured you will fall in love with these blueberry muffins.
  Eggs 3
  Paper muffin liners 1
  Oil 3 Tablespoon
  Heavy cream 1⁄4 Cup (4 tbs)
  Vanilla whey protein powder 1 1⁄4 Cup (20 tbs)
  Baking powder 2 Teaspoon
  Splenda 1⁄3 Cup (5.33 tbs)
  Cinnamon 1⁄4 Teaspoon
  Grated lemon rind 1 Tablespoon
  Grated orange peel 1⁄2 Teaspoon
  Blueberries 1⁄2 Cup (8 tbs)
  Cream cheese 3 Ounce, cut into 9 small cubes

Preheat oven to 375 degrees. Line 9 muffin tins with paper liners.Mix in eggs,cream & oil,keep stirring to blend the mixture well.To this mixture add whey powder,splenda,baking powder,cinnamon,lemon rind,& orange rind.
Stir the mixture well don't overdo it or else it will become too tight.Fold in blueberries to this mixture.
Into the greased tins,pour out the batter but half fill the tin,place cheese cake cube in the middle of the batter,pour over the remaining batter to cover the cheese cake.
Bake the muffin batter in the preheated oven for 10-15 mintues or till the time muffins top layer starts to crack up or looks dry.
Serve warm.

A few months ago, I tried blueberry muffins with egg whites and skim milk, and it turned out great. Highly recommended if you have high cholesterol. Quick instructions: Start with one and a half cup skim milk; two egg whites; three tablespoons light corn syrup; half a cup sugar; blueberries (according to taste); two and a half cups oat bran; one tablespoon baking powder; Mix milk, egg whites, corn syrup and sugar. In a large bowl combine oat bran and baking powder, then stir in the blueberries. Add moist mixture and blend gently. Fill tin cups with batter. Bake for 20 minutes. Take the baked blueberry muffins out of the oven and serve while hot!

This is one of the best blue berry muffin recipe I have seen. Thanks for posting this rather healthy blueberry muffin recipe aditis. I assume other sugar substitutes can be used in place of Splenda. Orange flavor sounds awesome. I am already loving this, I am sure I will fell in total love after trying this blueberry muffin recipe :)

In fact , I am very happy to see this recipe.My younger brother, who is currently living in New York, likes this blueberry muffins very much. He always use this muffin for evening snacks with tea. Now I can also take the taste of this muffin .I will surely try it . Thanks for posting this easy and simple recipe for blueberry muffin.
