|Shortening||1⁄4 Cup (4 tbs), melted|
|Cooked prunes||3⁄4 Cup (12 tbs), drained and chopped|
Combine flour, sugar, baking powder, and salt.
Combine egg, milk, and shortening; add to dry ingredients and stir only until moistened.
Fold in prunes.
Batter will be lumpy.
Do not overbeat.
Fill greased muffin pans two-thirds full.
Bake at 425° for 20 to 25 minutes.
