Strawberry Banana Muffin Bites
|Whole wheat flour||1 Cup (16 tbs)|
|Oat bran||3⁄4 Cup (12 tbs) (Unprocessed One)|
|Crunchy nutlike cereal nuggets||1⁄4 Cup (4 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Baking powder||2 Teaspoon|
|Ground cinnamon||1⁄2 Teaspoon|
|Strawberry banana low fat yogurt||8 Ounce (1 Carton)|
|Reduced calorie margarine||1⁄4 Cup (4 tbs), melted|
|Eggs||2 , beaten|
|Sliced fresh strawberries||1⁄2 Cup (8 tbs), slightly mashed|
|Mashed ripe banana||1⁄2 Cup (8 tbs)|
|Vegetable cooking spray||1|
Combine first 7 ingredients in a large bowl; stir well.
Combine yogurt, margarine, and eggs, blending well.
Add to dry ingredients, stirring just until moistened.
Gently fold in mashed strawberries and banana.
Spoon barter into miniature muffin pans that have been coated with cooking spray, filling three-fourths full.
Bake at 400° for 18 minutes or until golden.
Remove from pans immediately.
