Banana Oat & Honey Muffins

Ingredients
  Plain flour 250 Gram
  Rolled oats 75 Gram
  Baking powder 1 Tablespoon
  Grated nutmeg 1⁄2 Teaspoon
  Bananas 2 Medium, mashed
  Egg 1 , beaten
  Unsalted butter 75 Gram, melted
  Light muscovado sugar 30 Gram
  Buttermilk 175 Milliliter
  Runny honey 3 Tablespoon
Directions

Preheat the oven to 200°C/400°F/Gas 6.
Lightly grease and flour a tray of 12 muffin tins.
Put the flour, oats, baking powder, and nutmeg in a large bowl and mix together well.
Mix together all the remaining ingredients.
Use a spoon to fold them through the flour mixture, until just combined.
Spoon the mixture into the prepared muffin tins.
Bake for about 20 minutes, until the muffins have risen and are golden.

I used 3 bananas, 1/2 T cinnamon instead of nutmeg and added 1/2 cup of raisins - they are very soft and fluffy and absolutely delicious!
