Jelly Muffins

Ingredients
  Egg 1
  Cooking oil 1⁄3 Cup (5.33 tbs)
  Very ripe banana 1⁄2 Cup (8 tbs), mashed
  Milk 1⁄4 Cup (4 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Sifted all purpose flour 1 2⁄3 Cup (26.67 tbs)
  Salt 3⁄4 Teaspoon
  Baking powder 2 Teaspoon
  Soda 1⁄4 Teaspoon
  Red currant jelly 1⁄4 Cup (4 tbs)
Directions

Heat oven to 375 degrees.
Crease 12 medium muffin cups.
Beat egg, oil, banana and milk together lightly with a fork.
Stir in sugar.
Sift dry ingredients together into first mixture and stir only until dry ingredients are moistened.
Spoon into muffin cups,
