Orange Mince Muffins
|Egg||1 , beaten|
|Prepared mincemeat||1⁄2 Cup (8 tbs)|
|Apple juice||1⁄2 Cup (8 tbs)|
|Orange muffin mix||14 Ounce (1 Package)|
|Sifted confectionery sugar||1 Cup (16 tbs)|
|Rum extract||1⁄4 Teaspoon|
Combine the egg, mincemeat, and apple juice in mixing bowl.
Add the muffin mix all at once; stir just till blended.
Fill greased muffin pans half full.
Bake in hot oven (400°) for about 15 minutes or till golden brown.
Remove from pans immediately.
Blend the confectioners' sugar with the milk and rum extract; drizzle over warm muffins.
