Fig Oatmeal Muffins
|Quick cooking rolled oats||1 Cup (16 tbs)|
|Milk||1 Cup (16 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Baking powder||1 Tablespoon|
|Well beaten egg||1|
|Cooking oil||1⁄4 Cup (4 tbs)|
|Chopped dried figs||1⁄2 Cup (8 tbs)|
Combine quick-cooking rolled oats and milk; let stand 15 minutes.
In mixing bowl stir to combine thoroughly the flour, sugar, baking powder, and salt.
Combine egg, cooking oil, oat mixture, and dried figs; add all at once to dry ingredients.
Stir just till dough clings together.
Fill greased muffin pans 2/3 full.
Bake at 400° for 18 to 20 minutes.
