Blueberry Lover's Muffins
|All purpose flour||2 Cup (32 tbs)|
|Sugar||1⁄3 Cup (5.33 tbs)|
|Baking powder||4 Teaspoon|
|Cinnamon||1 1⁄2 Teaspoon|
|40% bran flakes||3 1⁄2 Cup (56 tbs)|
|Skim milk||2 Cup (32 tbs)|
|Vegetable oil||3 Tablespoon|
|Blueberries||1 1⁄2 Cup (24 tbs), unthawed (Fresh Or Frozen)|
Stir together flour, sugar, baking powder, spices and salt; set aside.
In large mixing bowl, combine cereal and milk.
Let stand 2 minutes or until cereal is softened.
Add egg whites and oil; beat well.
Add dry ingredients, stirring only until combined.
Gently stir in blueberries.
Portion batter evenly into 12 lightly greased 2 1/2-mch muffin-pan cups.
Bake in 400°F oven about 23 minutes or until light golden brown.
