Honey Bran Muffins
|All purpose flour||1 1⁄4 Cup (20 tbs)|
|Double acting baking powder||1 Tablespoon|
|Bran flakes||3 Ounce|
|1% milk||1 Cup (16 tbs) (Low Fat Milk)|
|Honey||1⁄3 Cup (5.33 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Egg||1 Large, beaten|
1. Preheat oven to 400°F. Spray twelve 2 1/2-inch nonstick muffin cups with nonstick cooking spray, or line with paper liners; set aside.
2. In medium bowl, whisk together flour, baking powder, and salt. In another medium bowl, combine remaining ingredients; let stand until cereal softens, 2 to 3 minutes. Pour wet ingredients into dry and stir until just moistened (do not beat or overmix).
3. Spoon batter evenly into prepared cups, filling each about two-thirds full. Bake 18 to 20 minutes, until muffins are
golden brown and toothpick inserted in center comes out clean. Cool on rack.
