|Cereal||1 1⁄2 Cup (24 tbs)|
|Skim milk||1 1⁄4 Cup (20 tbs)|
|Honey||1⁄4 Cup (4 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Dark molasses||1 Tablespoon|
|Chopped papaya||3⁄4 Cup (12 tbs) (Fresh)|
|Finely chopped crystallized ginger||2 Teaspoon|
Stir together flour, baking powder and salt.
Measure cereal and milk into large mixing bowl.
Let stand 2 minutes or until cereal is softened.
Add honey, oil, molasses and egg.
Stir in papaya and ginger.
Add flour mixture, stirring only until combined.
Portion batter evenly into 12 greased 2 1/2-inch muffin-pan cups.
Bake at 400°F about 25 minutes or until muffins are golden brown.
