Chocolate Chip Mini Muffins
|Sugar||1⁄2 Cup (8 tbs)|
|Shortening||1⁄4 Cup (4 tbs)|
|Milk||1⁄2 Cup (8 tbs)|
|Vanilla extract||1⁄2 Teaspoon|
|All purpose flour||1 Cup (16 tbs)|
|Baking soda||1⁄2 Teaspoon|
|Baking powder||1⁄2 Teaspoon|
|Miniature semisweet chocolate chips||2⁄3 Cup (10.67 tbs)|
In a large mixing bowl, cream sugar and shortening until fluffy.
Add egg, milk and vanilla; mix well.
Combine the dry ingredients.
Gradually add to the creamed mixture and mix well.
Fold in chocolate chips.
Spoon about 1 tablespoon of batter into each greased or paper-lined mini-muffin cup.
Bake at 375° for 10-13 minutes or until muffins test done.
Cool in pan 10 minutes before removing to a wire rack
