|Sugar||1⁄2 Cup (8 tbs)|
|Shortening||1⁄4 Cup (4 tbs)|
|Milk||1 Cup (16 tbs)|
|Sifted flour||1 1⁄2 Cup (24 tbs)|
|Ground cinnamon||1⁄4 Teaspoon|
|Baking powder||3 Teaspoon|
|Chopped peeled apples||1 1⁄2 Cup (24 tbs)|
|Sifted flour||1⁄2 Cup (8 tbs)|
|Firmly packed brown sugar||1⁄4 Cup (4 tbs)|
Combine sugar, shortening and salt; add egg and beat well.
Stir in milk.
Sift together flour, 1/4 tsp.cinnamon and baking powder.
Stir the flour into other mixture and blend just until flour is moistened.
Batter will be lumpy.
Add chopped apples which have been coated with 1/2 c.flour.
Fill well-greased muffin tins about two-thirds full.
Sprinkle with combined brown sugar and 1/4 tsp.cinnamon.
Bake in 400° oven 20-25 minutes or until golden brown
