Spicy Apple Carrot Muffins

  Non fat dry milk powder 1⁄2 Cup (8 tbs)
  Baking powder 3 Teaspoon
  Salt 1⁄2 Teaspoon
  Ground allspice 1⁄2 Teaspoon
  Grated nutmeg 1⁄2 Teaspoon
  Ground cinnamon 1 Teaspoon
  Whole wheat flour 2 1⁄2 Cup (40 tbs)
  Honey 1 Cup (16 tbs)
  Sunflower oil/Other oil 1 Cup (16 tbs)
  Eggs 4
  Pure vanilla extract 1 Teaspoon
  Grated apple 1 Cup (16 tbs) (Unpeeled)
  Grated carrot 1 Cup (16 tbs)

1. Preheat the oven to 400 degrees.
2. In a large bowl, combine the dry milk, baking powder, salt, allspice, nutmeg, cinnamon, and flour.
3. Combine the honey, oil, eggs, and vanilla and stir into the dry ingredients. Fold in the apple and carrot. Spoon into oiled muffin tins until they are two-thirds full.
4. Bake for 15 to 20 minutes or until done.
