Whole Wheat Dinner Muffins
|All purpose flour||1 Cup (16 tbs) (Unsifted)|
|Whole wheat flour||1 Cup (16 tbs) (Unsifted)|
|Wheat germ||1⁄4 Cup (4 tbs)|
|Baking powder||3 Teaspoon|
|Melted butter/Margarine/salad oil||1⁄4 Cup (4 tbs)|
|Granulated sugar/Firmly packed brown sugar / 2 tablespoons honey||1⁄4 Cup (4 tbs)|
|Milk||1 Cup (16 tbs)|
In a large bowl, stir together all-purpose flour, whole wheat flour, wheat germ, baking powder, and salt until thoroughly blended; make a well in the center.
In a separate bowl, lightly beat egg; stir in melted butter, sugar or honey, and milk.
Pour all at once into flour well.
Stir just enough to moisten all the dry ingredients.
Spoon batter into greased 2 1/2-inch muffin cups, filling each 2/3 full.
Bake in a 375° oven for about 25 minutes or until well browned and tops spring back when lightly touched.
