Peachy Moist Muffins
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Chopped pecans||1 Cup (16 tbs), chopped|
|Sugar||3⁄4 Cup (12 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Egg||1 , lightly beaten|
|Peach yogurt/Vanilla yogurt||1⁄2 Cup (8 tbs)|
|Butter/Margarine||1⁄2 Cup (8 tbs), melted|
|Vanilla extract||1 Teaspoon|
|Chopped peeled peaches/Well-drained canned peaches||1 Cup (16 tbs) (Use Fresh)|
In a large bowl, combine flour, pecans, sugar and baking powder.
Combine egg, yogurt, butter and vanilla; mix well.
Stir into dry ingredients just until moistened.
Fold in peaches.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400° for 15-20 minutes or until muffins test done.
Cool in pan 10 minutes before removing to a wire rack.
