|Active dry yeast||1⁄4 Ounce (1 Package)|
|Warm water||2 Cup (32 tbs) (110 - 115 F)|
|Self rising flour||4 Cup (64 tbs)|
|Egg||1 , lightly beaten|
|Butter/Margarine||3⁄4 Cup (12 tbs), melted|
|Sugar||1⁄4 Cup (4 tbs)|
In a large bowl, dissolve yeast in water; let stand for 5 minutes.
Combine flour, egg, butter and sugar; add to yeast mixture and mix well.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400° for 20-25 minutes or until muffins test done
