Low-Fat Lemon Poppy Seed Muffins
|All purpose flour||1⁄4 Cup (4 tbs)|
|Sugar||1 1⁄2 Cup (24 tbs)|
|Poppy seeds||1⁄4 Cup (4 tbs)|
|Baking powder||1 Tablespoon|
|Eggs/Egg substitute equivalent||3 , lightly beaten|
|Fat free milk||1 1⁄4 Cup (20 tbs)|
|Applesauce||3⁄4 Cup (12 tbs)|
|Lemon extract||2 Teaspoon|
In a large bowl, combine flour, sugar, poppy seeds and baking powder.
Combine eggs, milk, applesauce and lemon extract; stir into dry ingredients just until moistened.
Fill greased or paper-lined muffin cups three-fourths full.
Bake at 350° for 30-35 minutes or until muffins test done
