Banana Muffins

Ingredients
  Banana 1 3⁄4 Pound (ripe)
  Butter/Margarine 3⁄4 Pound
  Sugar 3 Cup (48 tbs)
  Eggs 6 , well beaten
  Banana extract 1⁄8 Teaspoon
  Vanilla extract 1⁄8 Teaspoon
  Cake flour 4 Cup (64 tbs)
  Salt 1⁄2 Teaspoon
  Baking soda 1 3⁄4 Tablespoon
Directions

Cream butter and sugar, add eggs, bananas and extracts in mixing bowl.
Stir well.
Add flour, salt and baking soda, which has been sifted 3 times.
Do not overmix.
Pour into well oiled muffin pans and bake in oven at 350°F for 30 to 40 minutes.
