Date Nut Muffins

Ingredients
  Pitted chopped dates 8 Ounce (1 Package)
  Boiling water 3⁄4 Cup (12 tbs)
  Corn oil 1⁄4 Cup (4 tbs)
  Vanilla 1⁄2 Teaspoon
  Flour 1 Cup (16 tbs)
  Whole wheat flour 1⁄2 Cup (8 tbs)
  Sugar 1⁄2 Cup (8 tbs)
  Chopped walnuts 1⁄3 Cup (5.33 tbs)
  Baking soda 1⁄2 Teaspoon
Directions

Grease 12 muffin cups.
In medium bowl stir together dates and boiling water, corn oil, and vanilla.
In small bowl stir together both flours, sugar, walnuts, and baking soda.
Add to date mixture, stir just until flour mixture is moistened.
Spoon into muffin cups.
Bake in 375° oven for 25 minutes.
Immediately remove from pans.
Cool on rack or serve warm.
