Morning Glory Muffins

Ingredients
  All purpose flour 4 Cup (64 tbs)
  Sugar 2 1⁄2 Cup (40 tbs)
  Baking soda 4 Teaspoon
  Ground cinnamon 4 Teaspoon
  Salt 1 Teaspoon
  Vegetable oil 2 Cup (32 tbs)
  Vanilla extract 4 Teaspoon
  Apples 4 Cup (64 tbs), peeled
  Raisins 1 Cup (16 tbs)
  Flaked coconut 1 Cup (16 tbs)
  Carrots 1 Cup (16 tbs), shredded
  Walnuts 1 Cup (16 tbs), chopped
Directions

In a large bowl, combine flour, sugar, baking soda, cinnamon and salt.
Mix oil, eggs and vanilla; stir into dry ingredients just until moistened.
Fold in apples, raisins, coconut, carrots and nuts.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 350° for 25-30 minutes or until muffins test done.
