Orange Muffins With Dates

  Orange 1
  Orange juice 1⁄2 Cup (8 tbs)
  Orange peel 1 Tablespoon, grated
  Egg 1
  Vegetable oil 1⁄2 Cup (8 tbs)
  Whole wheat flour 1 Cup (16 tbs)
  Packed brown sugar 3⁄4 Cup (12 tbs)
  All purpose flour 1⁄2 Cup (8 tbs)
  Baking powder 1 Teaspoon
  Baking soda 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Dates 1⁄2 Cup (8 tbs), chopped

Peel orange, reserving peel, and separate orange into segments.
Place peel, segments and juice in a blender or food processor.
Add egg and oil; blend well.
In a bowl, combine whole wheat flour, brown sugar, all-purpose flour, baking powder, baking soda and salt.
Add orange mixture and stir just until moistened.
Fold in dates.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 400° for 14-16 minutes or until muffins test done.
