Poi Muffins

Ingredients
  Flour 1 1⁄3 Cup (21.33 tbs)
  Salt 1⁄2 Teaspoon
  Sugar 1 Tablespoon
  Baking powder 4 Teaspoon
  Egg 1
  Butter 3 Tablespoon, melted
Directions

Sift dry ingredients together.
Use poi as purchased, do not mix with water.
Blend poi with remaining ingredients and add to dry ingredients.
Stir only until thoroughly mixed.
Spoon oiled muffin pans 2/3 full and bake at 400°F.for 30 minutes.
If fresh poi is not obtainable, use 1/3 cup of milk mixed with the canned poi.
