New York State Muffins

  All purpose flour 2 1⁄2 Cup (40 tbs)
  Sugar 1 1⁄3 Cup (21.33 tbs)
  Baking powder 1 Tablespoon
  Baking soda 2 Teaspoon
  Ground cinnamon 2 Teaspoon
  Salt 1⁄2 Teaspoon
  Eggs 2 , lightly beaten
  Vegetable oil 1⁄2 Cup (8 tbs)
  Chopped peeled apple 2 Cup (32 tbs) (Finely Chopped)
  Shredded carrots 1 Cup (16 tbs)
  Whole cranberries 1 Cup (16 tbs)
  Chopped walnuts 1 Cup (16 tbs)

In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
Mix eggs and oil.
Add apples and carrots; stir into dry ingredients just until 'moistened (batter will be thick).
Fold in cranberries and nuts.
Fill greased or paper-lined muffin cups two-thirds full.
Bake at 375° for 20-25 minutes or until muffins test done.
