Tropical Fruit Bran Muffins

Ingredients
  Egg 1
  Butter/Margarine 2 Tablespoon
  Crushed papaya/Crushed fresh pineapple/ mixture of both 3⁄4 Cup (12 tbs) (Use Fresh)
  Flour 1 1⁄4 Cup (20 tbs)
  Sugar 6 Tablespoon
  Baking powder 1 1⁄2 Tablespoon
  Soda 1⁄4 Teaspoon
  Salt 3⁄4 Teaspoon
  Bran flakes 1⁄2 Cup (8 tbs)
Directions

Beat egg, add melted butter and fruit pulp.
Sift together dry ingredients and stir into fruit mixture, then add bran.
Rub muffin pans with additional butter and fill 3/4 full.
Bake 30 mins.at 375° F.
