Noel Bran Muffins

Ingredients
  Whole bran cereal 1 1⁄4 Cup (20 tbs)
  Milk 1 Cup (16 tbs)
  Flour 1 1⁄2 Cup (24 tbs)
  Firmly packed brown sugar 1⁄2 Cup (8 tbs)
  Shredded carrot 1⁄2 Cup (8 tbs)
  Baking powder 2 Teaspoon
  Salt 1⁄4 Teaspoon
  Ground nutmeg 1⁄4 Teaspoon
  Butter/Margarine 1⁄4 Cup (4 tbs), melted
  Eggs 2
  Chopped dried apricots/Chopped dried seedless raisins 1 Cup (16 tbs), dried
Directions

Soften bran in milk.
In large bowl, blend together flour, sugar, carrot, baking powder, salt and nutmeg.
Combine bran mixture, butter and eggs; add to dry ingredients.
Stir until flour is moistened.
Fold in chopped apricots or raisins.
Fill 12 paper-lined or greased 2 1/2-inch muffin-pan cups.
Bake at 375°F 25 to 30 minutes or until golden.
