Pumpkin Apple Streusel Muffins
|All purpose flour||2 1⁄2 Cup (40 tbs)|
|Granulated sugar||2 Cup (32 tbs)|
|Pumpkin pie spice||1 Tablespoon|
|Baking soda||1 Teaspoon|
|Eggs||2 , lightly beaten|
|Solid pack pumpkin||1 Cup (16 tbs)|
|Vegetable oil||1⁄2 Cup (8 tbs)|
|Peeled finely chopped apples||2 Cup (32 tbs)|
|Streusel topping||1 Cup (16 tbs) (Adjust Quantity As Needed)|
In large bowl, combine flour, sugar, pumpkin pie spice, baking soda and salt.
In medium bowl, combine eggs, pumpkin and oil.
Add liquid ingredients to dry ingredients; stir just until moistened.
Stir in apples.
Spoon batter into greased or paper-lined muffin cups, filling 3/4 full.
Sprinkle Streusel Topping over batter.
Bake in preheated 350°F.
oven for 35 to 40 minutes or until wooden pick inserted in centers comes out clean.
