Orange Chocolate Muffins
|Milk||1 Cup (16 tbs)|
|Margarine||1⁄2 Cup (8 tbs), melted|
|Orange peel||1⁄2 Teaspoon, grated|
|Orange juice||1⁄4 Cup (4 tbs)|
|All purpose flour||1 1⁄2 Cup (24 tbs)|
|Whole wheat flour||1 Cup (16 tbs)|
|Icing sugar||1⁄2 Cup (8 tbs)|
|Baking powder||1 Tablespoon|
|Semi sweet chocolate chips||1⁄2 Cup (8 tbs)|
Preheat oven to 400 °F (205 °C).
Butter or line large muffin pan cups with paper cups.
In a bowl, beat egg.
Mix in milk, margarine, orange peel and juice.
In a large bowl, mix both kinds of flour, icing sugar, baking powder and salt.
Pour in liquid ingredients, stirring only as needed to moisten dry ingredients.
Lightly mix in chocolate chips.
Spoon batter into muffin cups until full.
Bake in oven 20 minutes or so.
