Ingredients
  Boiling water 480 Milliliter (2 Cups)
  Natural bran 480 Milliliter (2 Cups)
  Buttermilk 480 Milliliter (2 Cups)
  Honey 120 Milliliter, melted (1/2 Cup)
  Eggs 2 , beaten
  Stone ground whole wheat flour 540 Milliliter (2 1/4 Cups)
  Jerusalem artichoke 80 Milliliter (1/3 Cup)
  Ground flaxseed/Oatmeal 240 Milliliter (1 Cup)
  Baking soda 2 1⁄2 Teaspoon (13 Milliliter)
  Salt 1 1⁄2 Teaspoon (8 Milliliter)
  Raisins 295 Milliliter (1 1/4 Cup)
Directions

Pour boiling water over bran.
To this add buttermilk, honey and eggs.
Mix well.
Mix together flours, flaxseed, soda and salt.
Add liquid ingredients to dry and mix until blended.
Batter should not be too stiff.
Stir in raisins.
Bake at 350°F (180°C) for 20-30 minutes.
